Ingredients
Chicken:
2-ea 7oz chicken breast
salt & pepper
Apple Onion Relish:
1/2 lb yellow onions.
1 ea. red apples
1 oz olive oil
thyme
salt & pepper
Directions
  1. Grill 2-ea 7oz chicken breast with salt & pepper. Place the chicken on a plate with 3oz of apple onion relish between the chicken in a ^ shaped pattern.
  2. Juliann 1/2 lb yellow onions.
  3. Core and dice 1 ea. Red apples.
  4. Place 1 oz olive oil in a large pot and heat the oil just to the point where the oil starts too smoke but not burn.
  5. Add all of the onions and the thyme in the pot, cooking the onions until the onions are tender and light brown in color.
  6. Add the salt & pepper and all of the diced apples and cook for 5 min.
