Festive Holiday Biscotti

Perhaps oddly, Chris likes these with a dark French Roast or Cappuccino!

Preheat oven: 375°F
Makes: About 6 dozen
Ingredients
1/2 cup butter
1 1/3 cups sugar
2 tsp. finely shredded lemon peel
2 1/2 tsp. baking powder
1/2 tsp. baking soda
3 eggs
1 tsp. vanilla
3 1/4 cups flour
1 cup dried cherries, snipped
1 cup almonds, chooped
4 oz. white chocolate
1 Tbsp. shortening
Directions
  1. Beat butter. Add sugar, lemon peel, baking powder, and baking soda; beat until combined. Beat in eggs and vanilla. Beat in as much flour as you can with a mixer, then stir in the remaining flour, cherries, and almonds.
  2. Shape into three, 2" x 12" rolls. Place on an ungreased cookie sheet; flatten slightly. Bake at 375°F for 20 minutes (toothpick should come out clean). Cool on sheet for one hour.
  3. Cut each log into 1/2" slices diagonally. Place slices, cut side down, on the cookie sheet. Bake at 325°F for 8 minutes. Flip and bake for an additional 8 minutes.
  4. Cool on rack. Melt the white chocolate and shortening on low heat. Drizzle over cookies.
