Pink Peppermint Pie

This is a holiday favorite around our house. Cool, crisp, and refreshing.

Ingredients
1 graham cracker or chocolate crust
24 large marshmallows
1/2 cup milk
1 tsp. vanilla
1/8 tsp. salt
6 drops peppermint extract
6 drops red food color
1 cup chilled whipping cream
2 Tbsp. crushed peppermint candy
Directions
  1. Heat marshmallows and milk in saucepan over low heat, sirring constantly, just until marshmallows are melted.
  2. Remove from heat; stir in vanilla, salt, peppermint extract and food color.
  3. Refrigertate, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
  4. Beat whipping cream in chilled bowl until stiff.
  5. Stir marshmallow mixture until blended; fold into whipping cream.
  6. Pour into crust.
  7. Refrigerate at least 12 hours.
  8. Just before serving, sprinkle with crushed candy.
