Easy Mexican Rice Recipe

Ingredients
1/4 cup chopped cilantro
1 cup long grain rice
1/4 tsp ground cumin
1/2 tsp salt
1 tbsp vegetable oil
1/4 cup chopped onion
2 cups chicken stock
1 small tomato, chopped
1 clove garlic, minced
Directions
  1. Heat oil in heavy saucepan and cook rice over medium heat for 1 minute, stirring without browning the rice.
  2. Carefully add liquid and remaining ingredients and bring to a boil.
  3. Reduce heat to low, cover pot and continue cooking 15 to 20 minutes.
  4. Let sit for 5 minutes.
  5. Before serving, fluff rice mixture to mix all ingredients together.
