Peanut Butter Cookies

Crunchy rounds. Many mothers double the recipe since they disappear so quickly.

Servings: 3 dozen 2-1/2" cookies
Prep. Time: 15 mins
Cook Time: 10 to 12 mins
Oven Temp.: 375 F 		 
Ingredients
1/2 cup soft shortening (half butter)
1/2 cup peanut butter
1/2 granulated sugar
1/2 cup packed brown sugar
1 egg
1-1/4 cups flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
Directions
  1. Mix shortening, peanut butter, sugar, and egg thoroughly
  2. Blend all dry ingredients
  3. Chill for 30 mins
  4. Roll into balls the size of large walnuts
  5. Place 3" apart on lightly greased baking sheet
  6. Flatten with fork dipped in flour...crisscross
  7. Bake 10 to 12 minutes
