Raspberry Glace Pie

This is a very nice recipe in the spring and summer, when the raspberries start to come into season.

Ingredients
Few drops red food color
1 pk (3 ounces) cream cheese
1 cup Sugar
1/2 cup Water
1 Baked pie shell--9-inch
1 1/2 Quarts raspberries
3 Tbsp Cornstarch
Directions
  1. Prepare and bake pie shell.
  2. Mash enough raspberries to measure 1 cup.
  3. Mix sugar and cornstarch in 2-quart saucepan.
  4. Gradually stir in water, food color and mashed raspberries.
  5. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  6. Boil and stir 1 minute; cool.
  7. Beat cream cheese until smooth.
  8. Spread in pie shell.
  9. Fill shell with remaining raspberries.
  10. Pour cooked raspberry mixture over top.
  11. Refrigerate about 3 hours or until set.
